Athletes work hard all week and it is so tempting to get a takeaway or a little treat. Performance Nutritionist James Hudson has cooked up a tasty fakeaway option that will satisfy those cravings but also fuel your demands.
INGREDIENTS:
- 125g skinless boneless chicken breasts
- 75g jasmine rice
- 1 teaspoon oil
- 1 can pineapple chunks in juice
- 1 egg (egg whites)
- 2 tbsp. corn flour
- 2 tbsp. soy sauce
- 2 tbsp. rice vinegar
- 2 tbsp. tomato ketchup
- 2 tbsp. honey
- 5 spring onions
- 2 peppers
- 2 teaspoon ginger paste
- 2 cloves of garlic
Whisk egg whites, corn flavour and rice vinegar and add your chicken to a bowl to marinate.
Chop up your peppers, spring onions, chilli and garlic and put aside.
Brown your chicken in a pan to get that crispy texture.
To make the sauce, whisk up the juice from the pineapple, soy sauce, honey, rice vinegar and tomato ketchup.
Stir fry your veg with ginger paste and add the sauce. Add corn flavour and water to further thicken up.
Add your pineapple and chicken. Let the chicken cook all the way through and serve with jasmine rice.
