RECIPE:
- 1 Cup Apple Juice
- 1 Medium, whole Apple
- 100g Greek Yogurt 0%
- 40g Jumbo Whole Rolled Oats
- 1 Scoop Big Whey Vanilla
- ½ Teaspoon(s) Mixed Spice
METHOD:
In a saucepan combine the apple juice, cubed and cored apple, and 1/2 tsp mixed spice. Over a medium heat bring to a simmer for 3-4 minutes.
Add the 1/2 cup jumbo oats to the pan and lower the heat, stirring often and allowing the oats to soften and absorb the liquid. This should take 4-5 minutes.
Meanwhile, in a bowl combine the Big Whey vanilla with 2 heaped tbsp (100g) low fat Greek or Skyr yogurt.
When the oats are cooked, turn off the heat and then add the yogurt/whey mixture, stirring well to combine. Serve immediately. This can be topped with dried fruit or nuts to increase the energy content.
Also if you are a bigger athlete or requiring a higher carbohydrate portion you can increase the oats to a full cup and add a cup of water to the second step which increases the carbohydrate to 90g overall.
